Oyster tartare

Oyster tartare and prawn from the Marais, passion curry sorbet

Preparation time : 2 to 3 hours


Ingredients for the tartar:

  • 1 tray of 24 oysters, category M

  • 2 large marsh prawns

  • 1 shallot

  • 1/2 bunch of chives

Ingredients for the passion curry granita:

  • 200g. passion fruit

  • 1 tsp curry

Making the tartar:

Open the tray of oysters, drain well then cut them roughly into cubes.

Do the same with the shelled prawns.

Add the chopped shallot and chives.

Realization of the passion granita:

Cut the passion fruit in half, core and squeeze to obtain the juice. Add the curry to the juice and place in the freezer for 2 to 3 hours.

Then scrape with a fork.


Arrange the tartare in the oyster shell, top with passion curry granita.
